CREAMED PEAS AND NEW POTATOES


It is hard to find a recipe for creamed anything now days. I Google for new red potatoes and all I get is "roasted". When we lived on the farm, Mom had a huge garden and about June new June Peas were developing and concidently the potato plants had tiny tender red potatoes about the size of big marbles. Mom and I would pick the peas and shell them then she would give me a coffee can and tell me to dig up enough potatoes to fill it. "Now, Billy, only get the ones the size of your marbles", she would say. Then I would scrub the potatoes (the tender thin peels would rub right off) and she would blanch them until they were slightly tender. After that she put the peas and potatoes in a sauce pan with some butter and cook them just a little and add a little flour and salt and pepper and stir before she added some cream from prior day's milk and make a cream sauce. A pinch of sugar would bring out the sweetness of the peas. Good eatin' in June, I'd say.
